Recipe: Tropical Island Grilled Fish

Ingredients:

  • 1 whole fish (like snapper or trout, about 1 lb)
  • 2 tbsp olive oil
  • Juice of 1 lime
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Fresh herbs (like cilantro or parsley), for garnish
  • Lemon or lime wedges, for serving

Instructions:

  1. Prepare the Fish: If you haven’t done so already, gut and clean your fish. Make sure to remove any scales. Pat it dry with paper towels.
  2. Marinate the Fish: In a small bowl, mix olive oil, lime juice, minced garlic, grated ginger, soy sauce, honey, ground cumin, paprika, salt, and pepper. Rub this marinade all over the fish, making sure to get it into the cavity as well. Let it marinate for at least 30 minutes. (Or if you’re impatient like me, just a quick rub will do—no judgment!)
  3. Prepare the Grill: Get your fire started (whether it’s a campfire or a portable grill). If you’re on an island and only have a hand spear, improvise with a stick or stone. 😉 Once the grill is hot, make sure the grates are oiled to prevent sticking.
  4. Grill the Fish: Place the marinated fish on the grill. Cook for about 5-7 minutes per side, depending on the size of the fish and the heat of the grill. The fish should be opaque and flaky when done.
  5. Serve and Enjoy: Garnish with fresh herbs and serve with lemon or lime wedges on the side. Enjoy your tropical island feast!
